Halves and Quarters of Beef
Halves and Quarters are referred to as “Freezer Beef”. This is the same premium quality Natural Dry Aged Beef as we sell as individual cuts. It is referred to as freezer beef because it is assumed that it will be held longer in your freezer because of the quantity and it is priced differently than the individual cuts.
How much does it cost?
A side is approximately 175-200 pound of great tasting beef. The exact amount depends on the “hanging weight” of the animal and how you determine to have it cut. The exact cost is calculated on the hanging weight times the market price at that time. Essentially your beef cuts will be twice the price of the hanging weight price per pound. So if the price were $4.00 per pound hanging weight then you would be paying $8.00 per pound for filet mignon and $8.00 per pound for roasts. Add this value to the convenience of having wholesome, natural, great-tasting beef right in your freezer!
How will it come?
The beef is aged in a temperature humidity controlled chill box for at least 21 days; it is then cut, and wrapped twice for freshness. It is wrapped in freezer grade clear wrap and the ends are heat sealed. The cuts are wrapped again in freezer paper, labeled and flash frozen. We find that the beef cuts do not freezer burn as readily and the beef can be kept for up to 6 months to a year.
Cutting instructions for your half or quarter of beef will be determined by you! How thick do you want your steak? So you want the bone left in your cuts or would you like them to be boneless? So you want minute steaks cut or fajita strips etc. These instructions should be based on the size of your family and your cooking preferences. For example, does your family enjoy roasts or do you use more ground neat? These are some questions that will need answered when cutting your side of beef. Because this is a process that is designed for you in mind, please plan ahead to ensure availability.

If you are ordering a quarter, again cutting instructions would need to be specified. You will receive the same variety of cuts as a half of beef but less quantity of the cuts.

It takes about 3-4 weeks from the time a half or quarter is ordered until it will be ready. This time is needed for harvesting, the dry aging procedure and the individual cutting and preparation of the meat. Once it is ready we will establish a pick up time at Logan Family Farms ‘On Farm Market’ , at one of the areas community Farmer’s Market or another mutually agreed upon location.
The luxury of this is the convenience that you know that there is GREAT tasting wholesome beef a few steps away in your freezer waiting for you!
