Halves and Quarters are referred to as “Freezer Beef”. This is the same premium quality Natural Dry Aged Beef as we sell as individual cuts. It is referred to as freezer beef because it is assumed that it will be held longer in your freezer because of the quantity and it is priced differently than the individual cuts.
How much does it cost?
A half is approximately 175-200 pounds of great tasting beef. A quarter will yield about 85-90 pounds. The exact amount depends on the “hanging weight” of the animal and how you determine to have it cut. The exact cost is calculated on the hanging weight times the market price at that time. How will it come?
The beef is aged in a temperature humidity controlled chill box for at least 21 days; it is then cut, vacuum sealed, and labeled. The beef will stay good for up to a year (or more!) as long as it’s kept in a consistent and reliable freezer.
Cutting instructions for your half or quarter of beef will be determined by you! How thick do you want your steak? So you want the bone left in your cuts or would you like them to be boneless? So you want minute steaks cut or fajita strips etc. These instructions should be based on the size of your family and your cooking preferences. For example, does your family enjoy roasts or do you use more ground meat? These are some questions that will need answered when cutting your side of beef. Because this is a process that is designed for you in mind, please plan ahead to ensure availability.

If you are ordering a quarter, again cutting instructions would need to be specified. You will receive the same variety of cuts as a half of beef but less quantity of the cuts.
